After 100 days in the cranial helmet we are finall After 100 days in the cranial helmet we are finally done! He wore it 23 hours a day most of the time. We slacked off a bit the last week or so due to him being a little sick and snotty. I was afraid he’d get overheated with a fever. His head is almost perfectly round now and I’m so thankful that we were able to do this. We weren’t sure how much correction he would actually get since we started a little late and his soft spot was not fully open. Thankfully, the helmet still worked perfectly for him! Some days are harder than others. Yesterday was on Some days are harder than others. Yesterday was one of those tough days raising littles. But it’s funny, looking back at the photos from yesterday - I only see the joy. I don’t see the defeat or hear the screaming  or see the messy house I left to deal with today. 

We ate take out (they stole mine), we went on a walk to try and distract screaming babies, we did homework, we apologized to each other multiple times, we played Mario Kart, we identified an edible plant growing in our yard. 🌱 All good things.

Collecting leaves even though it’s a million degrees still, wrestling in the living room, Cohen the therapist, my twins kinda actually looking like twins 😆, big brother Landon reading books to everyone, playing games together, sick cuddles, and forever nursing my babies. 

There’s a lot going on, as usual. Life feels heavy right now. I’m carrying it the best I can. And in between all of that, there are these moments. ❤️

Prep+Pared – Quick & Convenient Cooking at Home

Y’all! I’m so excited to be sharing a quick & easy meal prep solution with you that is now available exclusively at Kroger here in Lexington, KY! We are one of the lucky cities to get to try out Prep+Pared before it is rolled out nationally! If you know me, you know that I’m always looking for little “life hacks” to help me get things done a little more conveniently. Work smarter, not harder – right? Well, being able to pick up a meal kit packed with fresh ingredients 100% measured + prepped at a moment’s notice is just the kind of thing I need in my busy full-time working-momma life!

So what is Prep+Pared? They are fresh-made, chef-designed meals you can prepare at home. Everything that you need is in the meal kit, which includes all of the pre-prepped and measured ingredients (except salt, pepper, and oil). They feed two adults and are ready from kit-to-fork in 10-20 minutes! Nate and I tried out the Peruvian-Inspired Salmon with Quinoa & Avocado Salad – it was delicious! I was pleasantly surprised by just how easy and convenient the steps were! I honestly felt like I ordered a dish from a restaurant. Needless to say, I was very proud of myself. Haha!

I’m usually a little pressed for time in the evenings once I get off of work and get started on dinner. Especially if we need to stop by the grocery store quickly to pick something up on the way home. We do the take-out thing a little more than I’d like to admit and I never feel great about what we’re eating when we do that. So this is kind of the perfect solution.

I thought this would be a great time to let Landon get in the kitchen and help me. I can’t tell you how many people I’ve seen in online mommy groups talking about how their 2 year old can crack an egg! WHAT? Landon has never helped me cook so I’m over here feeling that mom guilt, you know? Like, I should’ve taught him to bake a cake by now, obviously! 😉 I’m kidding! But also, I’m thinking maybe if I had a little more time to spare, I wouldn’t be as overwhelmed by the idea of letting a two year old “help me” in the kitchen. Since these meal kits are quick and come with easy step-by-step instructions I was able to focus completely on letting him help me without having to stop and think about what I needed to measure or if I forgot an ingredient. Everything I needed was right in front of me! And because I didn’t have to use a ton of dishes to whip this up, it made for extremely easy cleanup. Yes, you can bet we’ll be doing this again!

Here are the step-by-step instructions to show you exactly how easy this was! Feel free to click on the below image for the full instructions/ingredients.

1. Marinate + Cook Salmon (mix premeasured ingredients + place salmon in the mixture for 10 minutes. Sear salmon in hot pan 3-5 mins on each side. Reduce heat to medium, add marinade, heat until sauce is warm and salmon is fully cooked – about 3 minutes on my stove)

2. Mix Quinoa Salad (mix premeasured ingredients in a bowl together)

That’s it! I can’t say enough good things. Salmon is a favorite of mine when we go out for a special meal so I felt like a gourmet chef whipping this up! The quinoa salad is going to be a lunch go-to for me from now on – it was SO easy and flavorful. And just so you know, Landon has been in the kitchen every night with me since we cooked this meal requesting that I let him cook dinner and take his picture! 😀
