My littlest boys are 4️⃣!! Their only birthday My littlest boys are 4️⃣!! Their only birthday demand was that we get them a Sonic the hedgehog cake! 😆 

I still just sit and stare at them in disbelief sometimes.. my twin babies.. my last babies.. and somehow they’ve been here for 4 whole years. If you’re a twin mom, you know that the time passes different. The early stages are a blur in a way I don’t even know how to explain. It makes it all a bit more bittersweet.

Pumpkin Snicker-Doodle Day

I’ve had a very nice standing mixer since last Christmas. Technically it was a wedding gift from my parents, but they went ahead and let us have it. We didn’t open it until we moved into our house though, and to this day it has sat unused in a kitchen cabinet. Sad..

Recently I came across this recipe via a blog I love to read called Love And Photographs by Stacy Sargent. She blogged about making these cookies here, and I just couldn’t resist jumping on the baking train! I love pumpkin anything, and when I realized I would need to use my mixer I got crazy excited! This was my chance to make something super yummy!

Today, Brittany came over after work and I decided to show her the recipe for the cookies- it was immediately settled that we had to make these cookies. She had an appointment with a college advisor so she had limited time and didn’t get to stay for the actual baking process, but we made the actual cookie dough together and it was super fun.. and messy. And where my brain lacked in the ability to figure out what to do next, her light bulb would come on- and vice versa. We laughed about the fact that we probably couldn’t have made these cookies without each other, haha! I’ll be taking some to her tomorrow at work!

I’m gaining a lot more confidence in the kitchen, and I love it. And it’s just that much more fun with a friend! 😀 I can’t wait for the next baking adventure! I may attempt something fun for dinner tomorrow and if I do I will definitely share!

    Want a tip :)? Instead of making batter with the whisk – try using the white handle paddle type thing next time. It’s better for dough/frostings/etc. It’s called a flat beater.

    I’ve never used the whisk attachment once, actually.

    PS) For thicker dough – like for bread – you’d use the hook one! 🙂

    But yes – cake batters/cookie batter(dough) should be used with a flat beater unless specified! It has to do with the way the air forms in it, etc.
