Hey friends! Today I am sharing one of my all time favorite recipes to make in the crock pot – Lima Beans & Ham with Rice! My Mom made this for me while I was growing up all of the time and it is just a delicious/easy/inexpensive meal to throw together.I am posting the “official” recipe given to me but check out the video to see how I kind of wing it and do my own thing. This really is one of those recipes you can make your own depending on your taste! In this video I used pre-packaged fully cooked cubed ham, browned it up a bit with the onions and garlic, and threw it in with the beans and just enough water to cover everything. After Thanksgiving I used some of the left over honey ham I had and threw everything into the crockpot with chicken broth. It is easily adaptable!

Lima Beans & Ham with Rice
6 to 8 servings
Ingredients:
- 1 Center cut Ham Slice
- 1 Bag of Frozen Lima Beans
- 1/2 Cup of Chopped Onion
- 1Tbs Chopped Garlic
- 42oz Box of Chicken Broth
- Pepper to Taste
- Salt to Taste (Ham is salty watch how much you add)
Directions:
- Saute onions in olive oil, until soft
add garlic to onions and brown lightly - Add to Crock Pot
- Cut Ham Slice into small cubes
- Brown ham lightly
- Add to Crock Pot
- Add Frozen Lima Beans and Chicken broth
- Cook for 4 hrs on High or 6 hours on low
- Serve with Rice
