Quick & Easy Pesto Quinoa (Toddler Approved)

Pesto Quinoa
Quinoa is one of my favorite simple foods to make! It’s high in nutrients, gluten-free, and super versatile. If you’re a mom, you need more quick and easy superfoods in your repertoire, right?! Maybe you’ve been making quinoa dishes for years and you’re giving me the side eye right now wondering what rock I’ve been living under. I hear ya. I’ve been seeing delicious sounding recipes all over Pinterest for a long time but I just never gave any of them a try!

And then one day I saw this Cucina & Amore Basil Pesto quinoa meal in my local grocery store. I love pesto and I was looking for something healthy to take on the go. (READ: healthier than the Ramen noodle bowls I normally grab in a pinch.) I tried this and I was hooked! Landon tried it and he ate over half of my meal. So I decided to pick up a bag of quinoa and some pesto to recreate a much larger portion for quite a bit cheaper! I’ll still buy the others if we need something that we can throw in a bag and take with us but my “homemade” version is just as yummy! I make homemade pesto from time to time and I bet that would make it even better!

To my surprise, Landon is obsessed with pesto quinoa! He loves chicken (chicky, as he would say) so I’m thinking I may throw in some chicken next time along with some sun-dried tomatoes or avocado. The possibilities are pretty endless! Do you have any super simple go-to dishes? Bonus points if they’re toddler approved!
